Clementines

Clementines are a hybrid of mandarins and oranges, recognisable by their thin, easy-to-peel skin and their juicy, sweet, almost seedless flesh.

Morocco is one of the great clementine countries: the peak season runs from November to February. Picked ripe, they are far more fragrant than fruit that travels for weeks before reaching the shelves.

Ways to enjoy them

• On their own, as a snack rich in vitamin C
• As fresh juice, on their own or mixed with Navel oranges
• In a citrus salad with cinnamon and orange blossom water

Sold by the kilo. Store in a cool, airy place.
