Mint and wormwood (chiba) tea
Ingredients (for a teapot of about 750 ml)
- 1 tablespoon gunpowder green tea
- 1 good bunch of fresh mint
- 1 to 2 sprigs of wormwood (chiba), especially in winter
- Sugar to taste
- Simmering water
Method
- Put the tea in the teapot, pour in a small glass of simmering water, swirl, then throw this first water away: it "washes" the tea and removes its bitterness.
- Fill the teapot with simmering water and leave to brew for 2 to 3 minutes.
- Add the mint (stems included) and the wormwood, then the sugar.
- Serve by pouring from high up to make it froth, pour the first glass back into the teapot, then serve again.
Wormwood is powerful: one or two sprigs are enough to flavour the whole teapot.
