Parsley

Parsley is a biennial plant 25 to 60 cm tall, very fragrant when crushed. There are three different species of this biennial plant: curly parsley has very green leaves and long stems; the smooth leaves of flat-leaf parsley can grow up to 45 cm long. Both are used as a seasoning, whereas Hamburg parsley, grown for its white roots, is used as a vegetable.

Parsley, flat or curly, is mainly used to flavour salads, omelettes and dishes in sauce. Note that when cooking, you should not hesitate to use the parsley stalks, which hold much more flavour than the leaves.

It is also used in persillade (a parsley and garlic mix) to enhance some shellfish and grilled dishes.

It is easy to grow and resists most diseases fairly well.
